The Amanda Hat (link opens on her site in a new window, scroll down to find pattern) is a free online download that takes one skein of Malabrigo Merino Worsted.  Malabrigo Merino Worsted Wool Yarn On the pattern she says if the hat is knit exactly to gauge and instructions, you can actually get two hats from one skein.
